Eggs for breakfast keep you satiated
If you’ve been checking out my Daily Menu (it’s in my Blog), you may have noticed I frequently eat eggs for breakfast. Although egg whites are high in protein, they lack the fat to make them “stick” with you. Holly’s Veggie Omelet
Holly’s Veggie Omelet: Approximately 300 calories. Beat 2 eggs with 1/8 cup of low fat milk. Add salt and pepper to taste. Stir in last night’s leftover Roasted Veggies (see recipe under ”Side Dishes”). Pour into a hot skillet sprayed with Pam. Flip when lightly browned on one side. Add 1 – 2 slices of cheese to the top. Holly’s Cottage Cheese Sundae: Approximately 370 calories. Measure 1 cup of low fat cottage cheese into a bowl. Add 1/4 cup of raisins (130 calories). Drizzle one tablespoon of honey over the top, and sprinkle with cinnamon. This tastes like something you shouldn’t be eating! Holly’s Sunrise Sandwich: Approximately 300 calories. Poach 2 eggs in a microwave egg poacher. (These can be purchased at any home wares store, such as Bed, Bath & Beyond, Target, Wal-Mart, or even your grocery store.) Toast 1/2 of a Thomas’ Hearty Grains Whole Wheat bagel (these are 270 calories and are pre-sliced. Half is 135 calories.) Put the eggs on the bagel and serve open-faced. Holly’s French Toast Omelet
Holly’s French Toast Omelet: Approximately 300 calories. Beat 2 large eggs with 1/8 cup of low fat milk. Add sweetener (I use Splenda) to taste. Add cinnamon and a dash of vanilla flavoring. Soak 1 piece of Milton’s Whole Grain bread in the mixture, turning it over until the bread is completely saturated.
